Inspired by traditional Asturian techniques, Pelayo Cider relies on local apples and native yeast for a 100% spontaneous ferment.

Dry and unfiltered with no additives of any kind, this is cider in its purest form.​

Enjoy still or serve from a height to "break" your cider, releasing the aromas while producing a natural effervescence. Drink and repeat!
HARVEST
Apples are hand picked each fall from our 100+ year old family orchard in the Pajaro Valley.
PRESS
Traditional small batch pressing techniques allow for maximum flavor yield and integrity.
FERMENT
All our juice is spontaneously fermented and bulked aged at low temps for 6+ months.
BOTTLE
Blended to taste each spring, we are ready to bottle - unfiltered and without additives.
